Method

Step 1 of 5

Preheat oven to 200°C. Place leg of lamb into a baking dish.

Step 2 of 5

Rub in olive oil and season with salt and pepper. Roast for 30 minutes.

Step 3 of 5

Meanwhile, combine tomatoes, red capsicum and wedged red onions with 1 tbs olive oil and marinated olives.

Step 4 of 5

Reduce oven temperature to 180°C, add vegetable mix to pan around lamb and continue to cook for 45 minutes for medium or until cooked to your liking. Remove lamb, cover loosely and rest for 15 minutes before slicing.

Step 5 of 5

Combine parsley with grated rind of lemon, garlic clove and 2 tbs olive oil. Serve lamb and vegetables with dressing.
