  • 400grams pork fillet, trimmed of fat
  • 3tablespoons olive oil
  • 1tablespoons butter
  • 1 large onion, peeled and finely diced
  • 40grams chestnuts, vacuum packed, chopped
  • 25grams wholemeal breadcrumbs
  • 1/2 pack sage, fresh, chopped (grammage needed)

Description

Earthy sage and roasted chestnuts make a delicious, light healthy stuffing for pork fillet.

Method

Step 1 of 4

Pre-heat the oven to 180°C/160°C fan-forced. Heat the butter and half of the oil in a large pan on medium high heat and cook the onions for 5 minutes to soften.

Step 2 of 4

Stir in the chestnuts and sage and cook for 2-3 minutes. Tip into a bowl with the breadcrumbs and mix well.

Step 3 of 4

Slice the pork fillet open lengthways, without cutting all the way through. Lay it flat on a parchment lined baking tray and spoon the stuffing along the middle. Roll up and tie with 4 pieces of string along the length of the fillet.

Step 4 of 4

Brush the pork with the remaining oil and brown on all sides in a hot pan for 2-3 minutes. Roast for 20 or minutes until cooked through. Rest for 10 minutes, slice and serve.
