- 500grams pork tenderloin, sliced into 8 discs
- 3tablespoons olive oil
- 4tablespoons dukkah
- 2tablespoons honey
- 4 medium carrots, peeled and chopped
- 250grams puy lentils, ready to eat
- 175grams feta, crumbled
- 1 large lemon, juice and zest
- 1 pack coriander, fresh, chopped
- 125grams rocket
Description
This middle-eastern spiced dish is bursting with flavour and different textures.
Method
Step 1 of 4
Pre-heat the oven to 180°C/160°C fan-forced. Toss the carrots with a little oil, 1 tsp of dukkah and half of the honey in a roasting tin and roast for 20 minutes.
Step 2 of 4
Brush the pork slices with oil and rub all over with dukkah. Place in the roasting tin with the carrots and cook for 7-8 minutes until cooked through.
Step 3 of 4
Heat the lentils according to pack instructions. In a large salad bowl, toss the lentils, feta, lemon juice and zest, coriander and the remaining oil with the rocket. Add the roasted carrots and toss well.
Step 4 of 4
Serve the lentil and carrot salad topped with pork and a drizzle of honey on top.
