- 8tablespoons olive oil
- 2 large onions, finely sliced
- 675grams minced pork
- 6 cloves garlic, finely sliced
- 2 lemons, juice only
- 2teaspoons cayenne pepper
- 800grams chickpeas, 2 x 400 g cans, drained and rinsed
- 1 large handful fresh flat-leaf parsley, finely chopped
- 6 large tomatoes, chopped
Method
Step 1 of 2
Heat the oil in a large heavy-based pan, add the onions, and cook over a medium heat for 5 minutes, or until starting to soften. Add the mince and cook, stirring frequently, for 5 minutes, or until no longer pink.
Step 2 of 2
Stir in the garlic, lemon juice, and cayenne, and cook for 1 minute. Add the chickpeas and parsley, stir well, then cook for 5 minutes. Add the tomatoes, combine well, then simmer for 15 minutes, stirring occasionally. Serve with a crisp green salad and fresh crusty bread.
