- 600grams pork tenderloin
- 1tablespoons olive oil
- 1 1/2tablespoons jerk seasoning
- 2tablespoons honey
- 200grams pineapple, canned, chopped, juice reserved
- 150grams red cabbage, shredded
- 1 chilli, sliced
- 4 spring onions, sliced
- 2 limes, juiced
- 1 pack coriander, fresh, chopped
Description
This zingy jerk pork works perfectly with the bright flavours of pineapple slaw.
Method
Step 1 of 4
Pre-heat the oven to 180°C/160°C fan-forced. Place the pork fillet in a dish with olive oil, jerk seasoning, honey and 3/4 of the pineapple juice and coat the meat with the marinade. Cover and set aside for 1 hour.
Step 2 of 4
To make the slaw, toss the red cabbage, chopped pineapple, chilli, spring onions, lime and half of the coriander together in a bowl with lime juice and the remaining pineapple juice.
Step 3 of 4
Remove the pork from the marinade and pat dry with a paper towel. Drizzle oil in a large non-stick pan on medium high heat and seal the pork on all sides until lightly browned.
Step 4 of 4
Place the pork in a roasting tin, pour over the marinade and roast for 25 minutes, turning halfway through. Slice and serve the pork with the pineapple slaw.
