  • 2 large leeks, sliced
  • 4 medium apples, cored and sliced
  • 1 cup cider, dry
  • 1/2 bunch sage
  • 1kilograms pork fillet
  • 2 cloves garlic, peeled and minced
  • 2tablespoons olive oil
  • 1tablespoons Dijon mustard

Description

Pork, apple and sage always work well together and this easy traybake with cider is no exception.

Method

Step 1 of 3

Pre-heat the oven to 180°C. Place the leeks and apples in a large roasting tin. Pour in half of the cider, top with sage leaves, cover with foil and roast for 45 minutes.

Step 2 of 3

Mix the garlic, mustard and oil in a small bowl and rub the pork fillets all over with the mix. When the apples are almost cooked, heat a non-stick pan and sear the pork fillets on all sides, about 2 minutes.

Step 3 of 3

Add the pork to the roasting tin on top of the apples and leeks and pour in the rest of the cider. Roast for 20 minutes, rest for 5 minutes covered in foil then slice and serve.
