  • 1tablespoons olive oil
  • 1 medium red onion, peeled and finely sliced
  • 3 cloves garlic, peeled and minced
  • 4tablespoons pesto
  • 800grams chopped tomatoes
  • 250grams king prawns, raw, peeled, deveined
  • 4tablespoons parmesan, grated

Description

This easy pesto gnocchi dish is light but satisfying with prawns and lots of garlic.

Method

Step 1 of 3

Cook the gnocchi in a pan of boiling water for 3 minutes and drain well.

Step 2 of 3

Heat the oil in a large pan on medium heat and cook the onions and garlic for 5-6 minutes. Add the pesto and chopped tomatoes, bring to the boil, reduce the heat and simmer for 10 minutes until thickened and reduced.

Step 3 of 3

Add the prawns to the tomato sauce and cook for 2-3 minutes, until opaque. Toss in the gnocchi, mix well, divide between bowls and serve with parmesan on top.
