  • 2 cloves garlic, peeled and diced
  • 4 anchovies, drained and chopped
  • 1 medium lemon, juice and zest
  • 400grams zucchini, peeled into ribbons
  • 3tablespoons parsley, fresh, chopped

Description

Anchovy adds incredible depth of flavour to this simple and speedy gnocchi dish.

Method

Step 1 of 3

Cook the gnocchi in a pan of boiling water for 3 minutes and drain, reserving a cup of liquid.

Step 2 of 3

Heat the oil in a large pan on medium high heat and cook the garlic, anchovies and lemon zest for 1 minute. Add the zucchini and cook for 2 minutes.

Step 3 of 3

Stir in the gnocchi and a couple of tablespoons of cooking liquid to loosen and cook for 2-3 minutes, adding more water if necessary. Add lemon juice to taste, stir in the parsley and serve.
