- 350grams spinach
- 1 medium lemon, chopped into wedges

Description
This creamy cod and spinach gnocchi is warming comfort food that can be ready and on the table in no time.
Method
Step 1 of 3
Cook the gnocchi in a pan of boiling water for 3 minutes and drain well.
Step 2 of 3
Place the cod in a large pan with milk and garlic and bring to a simmer. Cook for 5 minutes and remove the cod with a slotted spoon, reserving the milk. Whisk the cornflour with 2 tablespoons of water in a small bowl.
Step 3 of 3
Whisk the cornflour and mustard into the milk on the heat, bring to the boil and cook, stirring, until thickened. Add the creme fraiche and spinach and cook until wilted. Stir through the cod and gnocchi and serve in bowls with lemon wedges and parmesan.
