  • 1 large butternut squash, peeled and deseeded and diced
  • 1 medium red onion, peeled and chopped into wedges
  • 3 cloves garlic, peeled and minced
  • 2tablespoons olive oil
  • 500grams gnocchi
  • 100grams kale, destalked and chopped
  • 2tablespoons balsamic vinegar
  • 100grams goats cheese, soft

Description

This squash and gnocchi tray bake is packed with autumnal flavour and topped with creamy goats cheese.

Method

Step 1 of 3

Pre-heat the oven to 180°C/160°C fan-forced. Toss the butternut squash, onion and garlic in a roasting tin with a tablespoon of oil and roast for 10 minutes.

Step 2 of 3

Add the gnocchi and drizzle over the remaining oil. Roast for 20 minutes, add the kale and balsamic vinegar and roast for 6-8 minutes.

Step 3 of 3

Serve with goats cheese dotted on top.
