Description

This twist on a caprese salad with crispy gnocchi makes for perfect light summer dining.

Method

Step 1 of 3

Cook the gnocchi in a pan of boiling water for 1 minute and drain well.

Step 2 of 3

Heat the oil in a large pan on medium high heat and cook the gnocchi for 5-6 minutes, stirring, until crisp and golden.

Step 3 of 3

Toss the lettuce, tomatoes, basil and mozzarella together in a bowl with the crispy gnocchi. Transfer to a serving platter, drizzle with pesto and serve.
