Description

Blending roasted red capsicums and vegetables into a richly flavoured sauce is all it takes to make this delicious gnocchi dish.

Method

Step 1 of 3

Pre-heat the oven to 200°C/180°C fan-forced. Toss the capsicums, onions and garlic in a tablespoon of oil in a deep roasting tin and roast for 20 minutes. Pour in the chopped tomatoes, basil and balsamic vinegar and roast for 20 minutes.

Step 2 of 3

Blitz the sauce in a food processor with the remaining oil. Cook the gnocchi in a pan of boiling water for 3 minutes and drain well.

Step 3 of 3

Toss the gnocchi with the sauce, top with grated parmesan and serve.
