  • 2 cloves garlic, peeled and minced
  • 200grams spinach
  • 500grams gnocchi
  • 80grams creme fraiche, reduced fat
  • 100grams cheddar, grated
  • 2tablespoons parmesan

Description

Creamy and cheesy mushroom and spinach sauce makes this gnocchi bake delicious and satisfying.

Method

Step 1 of 3

Pre-heat the oven to 170°C/150°C fan-forced. Heat the oil in a pan and cook the mushrooms and garlic for 5-7 minutes. Stir in the spinach and cook until wilted.

Step 2 of 3

Cook the gnocchi in a pan of boiling water for 2 minutes and drain well. Tip the gnocchi into the pan with the mushrooms, stir in creme fraiche and half of the cheddar and mix well.

Step 3 of 3

Tip the mix into a baking dish, top with the rest of the cheddar and parmesan and bake for 15-20 minutes.
