  • 80grams blue cheese, crumbled
  • 2 sprigs parsley, torn
  • 200grams mixed mushrooms, washed, drained and sliced
  • 1 medium white onion, peeled and diced
  • 2 cloves garlic, peeled and diced
  • 1tablespoons canola oil
  • 400grams gnocchi
  • 3/4 cup vegetable stock
  • 3/4 cup cream

Description

A deliciously creamy gnocchi dish with the earthiness of mushroom.

Method

Step 1 of 4

Heat up a large saucepan to a medium heat with the oil and fry the mushrooms, onion and garlic for 5 minutes.

Step 2 of 4

Add the gnocchi and fry for 1 minute. Add the vegetable stock to the pan and bring to the boil.

Step 3 of 4

Allow to simmer for 5 minutes and add the cream. Contine to cook for a further 5 minutes.

Step 4 of 4

Once the sauce has reduced, serve with the crumbled blue cheese on top and garnish with parsley.
