- 1 medium red onion, peeled and diced
- 4 cloves garlic, peeled and minced

- 50grams parmesan, grated, divided
- 3tablespoons parsley, fresh, chopped

Description
This easy gnocchi dish is full of Italian flavour with lots of garlic and zesty lemon.
Method
Step 1 of 3
Heat half of the oil in a large pan on medium heat and cook the brussels sprouts for 6-8 minutes until slightly crisp. Cook the gnocchi in a large pan of boiling water according to pack instructions. Drain and reserve some of the cooking liquid.
Step 2 of 3
In another pan on medium heat, heat the rest of the oil and cook the onion for 5 minutes, add the garlic and cook for 3 minutes. Stir in the butter, lemon juice and a teaspoon of zest and 30g of grated parmesan and cook for 5 minutes, until melted and bubbling.
Step 3 of 3
Stir the brussels sprouts and gnocchi into the sauce, adding a little cooking liquid to loosen if needed. Stir through the parsley and serve immediately, topped with the rest of the parmesan and with extra lemon juice and zest if desired.
