  • 2 cloves garlic, peeled and minced
  • 2 medium limes, juice and zest
  • 1tablespoons smoked paprika
  • 1tablespoons canola oil
  • 400grams red cabbage, shredded
  • 4 spring onions, finely sliced
  • 1 bunch coriander, fresh, chopped
  • 60grams jalapeno pepper, drained
  • 8 tortillas

Description

Ready cooked prawns and a quick slaw make the perfect healthy filling for tacos.

Method

Step 1 of 3

Heat the oil in a large pan on medium high heat and cook the garlic for 3 minutes. Tip in the prawns, smoked paprika, a teaspoon of lime zest and a squeeze of lime and cook for 2 minutes to heat the prawns through.

Step 2 of 3

Toss the red cabbage, spring onions, half of the coriander and the remaining lime juice and zest in a large bowl.

Step 3 of 3

Heat the tortillas, top with prawns, slaw, jalapenos and fresh coriander and serve.
