  • 450grams fresh salmon, thinly sliced
  • 6-8 limes, juice only
  • 4 spring onions, finely chopped
  • 2 celery, finely sliced
  • 1tablespoons fresh coriander, finely chopped
  • 100grams rocket (to garnish)
  • 8 oatcakes (to serve)

Method

Step 1 of 3

Place the salmon in a non-metallic bowl and cover with the lime juice. Cover and leave in the fridge for 25 minutes.

Step 2 of 3

When ready to serve, drain the salmon, add the spring onions, celery and coriander and mix well.

Step 3 of 3

Garnish with the rocket and serve with oatcakes, if liked.
