  • 2 large avocado
  • 2 medium pink grapefruit
  • 2tablespoons olive oil
  • 1 pinch salt
  • 1 pinch cracked black pepper
  • 2tablespoons mint, fresh, chopped
  • 2tablespoons coriander, fresh, chopped
  • 1/2 medium red chilli, diced, deseeded
  • 160grams watercress

Description

This bright and fresh prawn, avocado and pink grapefruit salad requires no cooking and is packed with citrus flavour.
Instruction tip
Add a teaspoon of honey to the dressing if you prefer a sweet dressing.

Method

Step 1 of 5

Peel the grapefruit, removing the pith, with a sharp knife and squeeze the juice from the peel into a small bowl. Slice the grapefruit into thin rounds then slice each in half.

Step 2 of 5

Whisk together the grapefruit juice, red chilli and olive oil and season to taste.

Step 3 of 5

Slice the avocados in half, remove the stone, scoop the flesh out with a spoon and cut into half moons.

Step 4 of 5

Add the watercress, avocado, prawns and grapefruit to a large bowl, pour over the dressing and mix well.

Step 5 of 5

Divide the salad mix between 4 plates, sprinkle over chopped coriander and mint and serve.
