  • 1/2 rockmelon, peeled, sliced
  • 1/3 cup flat-leaf parsley leaves
  • 1/2 bunch red radishes, washed, thinly sliced
  • 1tablespoons fresh orange juice
  • 160grams rocket leaves
  • 1teaspoons wholegrain mustard
  • 1tablespoons olive oil
  • 1tablespoons fresh lemon juice
  • 12 slice prosciutto

Method

Step 1 of 3

Place oil, lemon juice, orange juice and mustard in a small screw-top jar. Season with sea salt and ground black pepper. Shake well to combine and set aside.

Step 2 of 3

Divide the rockmelon, prosciutto, rocket leaves and radish among serving plates.

Step 3 of 3

Drizzle with dressing. Season with freshly ground black pepper and garnish with parsley leaves.
