  • 12 fresh asparagus spears, trimmed
  • 24 slices pancetta, thin slices
  • 1 clove garlic, crushed
  • 4tablespoons olive oil
  • 1tablespoons balsamic vinegar
  • 1tablespoons orange juice, freshly squeezed
  • 1teaspoons Dijon mustard
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 butter lettuce, torn into bite-sized pieces
  • 100grams rocket leaves
  • 1 small radicchio, torn into bite-sized pieces
  • 200grams cherry tomatoes
  • 100grams Parmesan cheese, freshly shaved

Description

This fresh zingy salad pairs chargrilled asparagus with crispy pancetta, peppery rocket, sharp parmesan and juicy tomatoes tossed in a zesty orange dressing.

Method

Step 1 of 4

Blanch the asparagus spears in a pan of boiling water for 2-3 minutes. Drain, and immediately refresh the asparagus in a bowl of cold water. When the spears are cool enough to handle, drain again.

Step 2 of 4

Heat a ridged cast-iron grill pan or griddle until hot. Wrap 2 slices of the pancetta around each asparagus spear. Grill the asparagus spears for about 3-4 minutes until beginning to char, turning once halfway during the cooking time. Set aside.

Step 3 of 4

To make the dressing, whisk together the garlic, oil, balsamic vinegar, orange juice, and mustard in a small bowl. Season with salt and black pepper, and whisk again.

Step 4 of 4

Toss together the salad leaves, tomatoes, and dressing in a bowl, and divide among 4 serving plates or bowls. Top each serving with 3 of the asparagus and pancetta spears, and sprinkle the Parmesan shards over the top. Serve immediately.
