- 180grams prawns, raw, peeled, deveined, chopped
- 400grams salmon
- 1 medium red chilli, diced
- 1 lemon, zested
- 1/2 bunch coriander, fresh, chopped
- 6 spring onions, finely sliced
- 200grams red cabbage, shredded
- 2 medium carrots, cut into matchsticks
- 4tablespoons Greek yoghurt
- 1 medium lime juiced and zested
- 4 wholemeal buns
- 1tablespoons olive oil

Description
Change up burger night with these zingy prawn and salmon patties topped with crunchy lime slaw.
Method
Step 1 of 3
Tip half of the prawns and half of the salmon into a food processor with 3 spring onions, lemon zest and half of the coriander. Blitz to a coarse paste and tip into a bowl with the rest of the salmon and prawns. Mix well and form into 4 patties with your hands. Chill in the fridge for 10 minutes.
Step 2 of 3
Mix the red cabbage, carrots and remaining spring onions and coriander with Greek yoghurt, lime juice and zest in a large bowl.
Step 3 of 3
Heat the oil in a large, non-stick pan on medium high heat and cook the burgers for 3-5 minutes on each side until cooked through. Serve on the buns topped with slaw.
