  • 600grams carrots, peeled and diced
  • 1 onion, diced
  • 2 celery sticks, thinly sliced
  • 600grams potatoes, peeled and diced
  • 1teaspoons salt
  • 2-4 cloves garlic, minced
  • 2 sprigs fresh rosemary, finely chopped
  • 1/2teaspoons sweet paprika (optional)
  • 2tablespoons fresh parsley,
  • 1 cup frozen peas, chopped
  • 600grams lamb mince
  • 1tablespoons butter
  • 1tablespoons plain flour
  • 1teaspoons black pepper
  • 1 cup chicken stock
  • 10 sheets puff pastry
  • 1 egg white, lightly whisked

Method

Step 1 of 10

Pre heat oven to 180°C.

Step 2 of 10

Heat oil in a pan on medium heat. Add carrots, onion, celery, potato and salt. Cook until vegetables soften.

Step 3 of 10

Add garlic, rosemary, parsley, paprika and peas. Mix well.

Step 4 of 10

Add mince and allow to brown. In that same pan move everything to one side of the pan.

Step 5 of 10

On the empty side of the pan add the butter and flour. Mix well until the butter melts and the flour turns a light brown.

Step 6 of 10

Add in the pepper and the stock and mix everything. Allow it to simmer for a further 5 to 7 minutes until the mixture thickens. Allow to cool before filling your pastry.

Cut each sheet of puff pastry into 4 squares.

Step 8 of 10

In each quarter, place 2 tbs of filling, then fold in a triangular shape and press the edges together. Pinch the edges into a pattern.

Step 9 of 10

Place pasties onto a baking tray, brush with egg white for a shiny finish and sprinkle some sesame seeds on top.

Step 10 of 10

Bake for 20 minutes or until golden.
