- 375grams ricotta cheese
- 150grams short cut bacon, chopped into small pieces or pre-packaged bacon pieces
- 120grams baby leaf spinach
- 125grams three cheeses
- 1 egg
- 4 sheets puff pastry
- 1teaspoons black pepper
- 1/2teaspoons himalayan pink salt
- 2tablespoons milk, for brushing
- 1/2tablespoons poppy seeds (optional sprinkle for the top of the rolls)
- 1/2tablespoons sesame seeds (optional sprinkle for the top of the rolls)

An easy and delicious savoury pastry.
Instruction tip
These are great for freezing just double wrap and pop in an airtight container. Defrost as needed, eat cold or reheat in airfryer.
Method
Step 1 of 6
Preheat oven to 180 degrees fan forced, or 200 degrees conventional.
Line two baking trays with baking paper.
Gather all your ingredients except for the frozen Puff Pastry.
Note: Not getting the pastry out the freezer until after Step 2 - chopping the spinach and bacon, prevents it from thawing and drying out too quickly and if you are short of bench space this helps too.

Chop your spinach finely but not too tiny.
Chop your short cut bacon into small pieces.
Step 3 of 6
Collect your pastry sheets out of the freezer and lay separately on the kitchen bench.
Put all ingredients into a mixing bowl except for your milk, sesame and poppy seeds.
Mix all together.
Step 4 of 6
Cut pastry sheets down the middle so you have two equal halves. Place the spinach, bacon and cheese mix along the centre of each pastry half. Carefully roll each pastry piece over the mixture, making sure there is an overlap of pastry of at least 1cm.

Cut each roll into 4 pieces and place on a lined baking tray.
Brush rolls with milk and if desired, sprinkle on some sesame seeds and/or poppy seeds.
Alternately, combine the two seeds together and sprinkle over milk brushed rolls.
Bake for 25- 30 minutes, depending on your oven.
Keep your eye on them after 15 minutes, as trays may need rotating if the top shelf ones are browning too fast.
