For coating
- plain flour
- 2 eggs, beaten
- 75grams unsalted butter
- 1tablespoons olive oil
- 1 onion, finely chopped
- 1.20L chicken stock, hot
- 225grams arborio rice
- 4tablespoons fresh parsley, finely chopped
- 1 pinch salt (to taste)
- 1 pinch pepper (to taste)
- 1L oil (for deep frying)
- bread crumbs
- 4tablespoons parmesan, finely grated (for crumbing)
Description
Great for parties or just as a side! Crunchy on the outside and delicate cheesy flavoured rice inside. A delicious snack the entire family will enjoy.
Instruction tip
Rice balls can be made ahead and refrigerated or frozen and cooked at your own convenience. Best fried in Rice Bran Oil.
Method
Step 1 of 11
Heat the butter and olive oil in a large pan. At the same time, pour the chicken stock in a medium sized saucepan and gently allow it to warm on low heat.

Add the onion and gently cook on low heat until soft but not browned.

Add the rice & stir for a few minutes.

Pour in a ladle full of stock and stir. Simmer gently, stirring, until the liquid is absorbed.

Continue adding the stock, a ladleful at a time until the rice is tender. It usually takes about 20 - 25 mins

Stir in the parmesan, parsley and season to your liking.

Allow to cool down and shape into small balls.

Sprinkle a little flour on a tray lined with baking paper. Place the balls on the tray and chill for an hour.

Remove from refrigerator and roll the balls in flour, egg and then breadcrumbs.

Fry in batches for a few minutes or until golden brown.

Drain on absorbent paper and serve with your favourite Aioli or on their own.
