- 100grams plain flour
- 3teaspoons thyme, finely chopped (save 1tsp for scattering)
- 100grams unsalted butter, chilled and diced
- 100grams firm blue cheese, rind removed and grated
- 1 egg, yolk only
- 1 pinch sea salt

Method
Step 1 of 4
Place the flour and thyme in a bowl or food processor. Add the butter and rub in with the fingertips or pulse until the mixture resembles breadcrumbs. Stir in the blue cheese and egg yolk and mix or process briefly to a dough.
Step 2 of 4
Tip the dough out on to a lightly floured surface and lightly knead until smooth, then roll out into a rectangle 5 mm thick. Cut into strips about 5 mm wide and 9 cm long.
Step 3 of 4
Place slightly apart on a greased baking sheet. Sprinkle with sea salt and bake in a preheated oven, 200°C , Gas Mark 6, for about 15 minutes until golden.
Step 4 of 4
Leave to cool slightly on the baking sheet, then transfer to a wire rack to cool completely. Serve scattered with extra thyme.
