  • 2tablespoons extra virgin olive oil
  • 1 dash salt (to taste)
  • 1 dash pepper (to taste)
  • 1 whole round brie
  • 2 sprig thyme (or other herb)

Description

Quick easy and tasty for a cheese or grazing platter.
Instruction tip
Can add any kind of herbs to tomato mixture if desired. If the Brie doesn't soften enough in room temperature, pop in microwave for 30 seconds (or to desired effect) to just warm and slightly getting melted.

Method

Step 1 of 5

Heat olive oil in small saucepan on med heat.

Step 2 of 5

Cut cherry or grape tomatoes in half and add to oil in saucepan. Season with salt and pepper and thyme (if using).

Step 3 of 5

Bring to light boil then reduce heat and simmer for 10 min or so. Adjust seasonings if needed. Keep warm until ready to serve.

Step 4 of 5

Remove brie from fridge and leave out to soften at room temperature.

Step 5 of 5

When serving, pour tomato and oil over the top of the brie to allow cheese to melt a little in the middle. Serve immediately with wafers or crackers.
