Description

Enjoy an alfresco dinner with this jerk-spiced barbecue lamb recipe that's topped with a lip-smacking lemon, parsley and chilli dressing.

Method

Step 1 of 3

Combine spices, sugar and thyme in a small bowl. Rub spice mixture all over lamb.

Step 2 of 3

Heat a barbecue flat plate over high heat. Cook lamb, fat-side down, for 15 minutes. Turn and cook for a further 15 minutes for medium or until cooked to your liking. Transfer to a plate, cover loosely with foil and rest for 10 minutes. Thinly slice lamb.

Step 3 of 3

Combine zest, lemon juice, parsley and chilli in a small bowl. Top lamb with lemon mixture and serve with lemon wedges.
