  • 2centimeters ginger, finely grated
  • 3 garlic cloves, crushed
  • 1/4 cup sriracha sauce
  • 1/3 cup Woolworths tomato sauce
  • 2tablespoons salt-reduced soy sauce
  • 2tablespoons rice vinegar
  • 1/3 cup brown sugar
  • 1kilograms chicken breast fillets
  • 1 pineapple, cut into thick wedges, cored
  • 2 spring onions, thinly sliced diagonally
  • 2 limes, cut into cheeks

Method

Step 1 of 3

Preheat a barbecue grill or chargrill pan over high heat. Combine pineapple juice, ginger, garlic, sauces, vinegar and sugar in a large bowl. Reserve half of the marinade in a small bowl. Add chicken to marinade in large bowl and turn to coat.

Step 2 of 3

Grill chicken for 20 minutes, turning and brushing with reserved marinade every 3 minutes, or until cooked through. Grill pineapple for 10 minutes on each side or until charred.

Step 3 of 3

Place chicken and pineapple on a platter. Scatter over onion and serve with lime cheeks.
