  • 2tablespoons Moroccan seasoning
  • 23grams pistachio dukkah
  • 1/3 cup Woolworths extra virgin olive oil
  • 1/2 bunch continental parsley, leaves picked, finely chopped
  • 2 lemons, 1 juiced, 1 cut into wedges
  • 200grams hummus
  • 6 Lebanese bread rounds
  • 120grams baby spinach leaves

Description

Celebrate Middle Eastern flavours with delicious dukkah mushroom and hummus wraps. Mushrooms are a hearty meat alternative in this fab vegetarian recipe.

Method

Step 1 of 3

Preheat a barbecue grill or chargrill pan over high heat. Stir vinegar and sugar in a small bowl until sugar has dissolved. Add onion and stir to combine. Set aside until required.

Step 2 of 3

Meanwhile, place mushrooms in a large, shallow baking dish. Add seasoning and dukkah. Drizzle with 1/4 cup oil, then toss to coat. Grill mushrooms for 5 minutes on each side or until charred and softened. Thickly slice.

Step 3 of 3

Meanwhile, combine parsley, remaining oil and lemon juice in a small bowl. Divide hummus among bread rounds. Top with mushroom, spinach and drained onion. Drizzle with parsley oil, fold to enclose filling and serve with lemon wedges.
