  • 200grams Bulla Cottage Cheese, Original
  • 1/2 cup tomato pizza sauce
  • 1 red capsicum, quartered
  • 1 large eggplant, sliced
  • 12 button mushrooms, sliced
  • 4 wholemeal pita breads
  • 4 medium zucchini, sliced
  • 2tablespoons basil leaves

Method

Step 1 of 4

Preheat oven to 200°C (180°C fan-forced).

Step 2 of 4

Char-grill eggplant, zucchini, mushroom and capsicum on a non-stick grill or BBQ until tender. Remove skin from blackened red capsicum and cut into strips.

Step 3 of 4

Spread the pita breads with tomato sauce and top with vegetables. Dollop evenly with cottage cheese and place in the oven for 10-15 minutes or until base is crisp and the cheese has browned.

Step 4 of 4

Serve topped with basil leaves.
