  • 100grams popcorn kernels
  • 1teaspoons chilli powder

  • 60grams jalapeno peppers, drained and finely diced

Description

This spicy jalapeno, lime & coriander popcorn is packed with far more delicious flavour than salted popcorn.

Method

Step 1 of 4

Heat half the oil to a large, deep pan on a medium high heat. Add 2-3 kernels to the pan and once they begin to pop, add the remaining kernels in a single layer to the pan.

Step 2 of 4

Cover the pan with a lid and shake well to coat all the kernels with oil.

Step 3 of 4

Leave on the heat until the kernels start to pop, occasionally shaking the pan to prevent burning and evenly cook the kernels. After 6-7 minutes remove from the heat.

Step 4 of 4

Add the remaining oil, chilli and cumin powders, lime zest, half the lime juice, chopped coriander and jalapenos. Shake with the lid on to coat evenly. Leave to stand for 1 minute and serve warm with extra lime wedges.
