  • 1 cucumber
  • 2 mangoes
  • 2 limes, juiced
  • 1tablespoons garlic stir-in paste
  • 2tablespoons olive oil
  • 1tablespoons lightly dried parsley
  • 1tablespoons lightly dried chilli

Method

Step 1 of 4

In a bowl, whisk parsley & garlic with olive oil. Pour over salmon & refrigerate for 10 minutes.

Step 2 of 4

Finely dice the flesh of mangoes and place in a medium bowl. Add cucumber, chilli and lime juice. Mix well and place in fridge.

Step 3 of 4

Place salmon fillets on a medium heat BBQ and cook for 4 minutes on one side, turn over and baste with reserved marinade and cook for 3 minutes.

Step 4 of 4

Serve salmon with mango & chilli salsa.
