  • 1 2/3 cup vegetable stock, made with 1 stock cube, hot
  • 100grams parsley, fresh, leaves picked, chopped
  • 100grams mint, fresh, leaves picked, chopped
  • 4 spring onions, sliced
  • 300grams tomatoes, diced
  • 1 cucumber, diced
  • 2 lemon, juice and zest
  • 6tablespoons olive oil
  • 100grams pomegranate seeds

Description

Tabbouleh is a classic middle eastern bulghur salad packed with herbs, the perfect accompaniment to spiced lamb or chicken.

Method

Step 1 of 3

Place the bulghur wheat in a large bowl and pour over the hot vegetable stock. Cover and leave to soak for 30 minutes.

Step 2 of 3

Add the chopped herbs, spring onions, tomatoes and cucumber to a large bowl.

Step 3 of 3

Drain the bulghur well and add to the bowl with the vegetables, stirring well to mix. Pour over the lemon juice and olive oil, add pomegranate seeds, mix well and serve.
