  • 200grams cherry tomatoes, deseeded and diced
  • 1/2 cucumber, diced
  • 1 red onion, peeled and diced
  • 1 lemon, juice and zest
  • 2tablespoons olive oil
  • 2tablespoons dukkah, optional

Description

This light and summery cauliflower tabbouleh is packed with herby and zesty flavours.

Method

Step 1 of 2

Place the cauliflower and herbs in a food processor and blitz to a coarse rice consistency.

Step 2 of 2

Add the cherry tomatoes, cucumber, red onion, lemon juice and zest to a large bowl, tip in the cauliflower and mix well. Drizzle in the olive oil, sprinkle over dukkah if using and serve.
