- 80grams dried prawns
- 2 eggs, well beaten
- 100grams fresh shelled baby peas
- 2 spring onions
- 1 shallot
- 125grams roast pork
- 1tablespoons vegetable oil
- 180grams cooked long-grain rice
- 2teaspoons soy sauce
- 1 pinch salt
- 1 pinch pepper
Method
Step 1 of 4
Place the prawns in a bowl, cover with warm water and leave to steep for 15 minutes.
Step 2 of 4
Make an omelette with the eggs then cut into thin strips. Cook the peas in boiling water for 5 minutes.

Wash the spring onions and slice into small pieces. Peel and finely chop the shallot. Cut the roast pork into small dice. Peel the prawns if unpeeled.
Step 4 of 4
Heat the oil in a wok and cook the chopped shallot until it changes colour. Add the cooked rice and heat for 2 minutes. Add the prawns, diced pork, omelette strips, spring onions and peas. Sprinkle with soy sauce, season, stir and serve.
