- 3teaspoons extra virgin olive oil
- 300grams Woolworths RSPCA Approved chicken tenderloins
- 500grams Woolworths washed & ready to cook pumpkin cubes
- 500grams Barilla rigatoni N89
- 190grams Barilla pesto genovese
- 1/4 cup Woolworths shredded parmesan
- 1/4 bunch basil, leaves picked, large leaves coarsely torn
Description
An affordable, easy-to-make weeknight dinner that combines the flavours of basil pesto, succulent chicken and roasted pumpkin with rigatoni.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Grease a large baking tray with 1 tsp oil. Place chicken and pumpkin on prepared tray in a single layer. Season and drizzle with remaining oil. Bake for 20 minutes. Coarsely tear chicken.
Step 2 of 4
Meanwhile, cook pasta in a large saucepan of boiling water following packet instructions. Drain, reserving ½ cup cooking liquid.
Step 3 of 4
Return pasta to pan. Add chicken, pumpkin, pesto and reserved cooking liquid. Season and toss to combine.
Step 4 of 4
Divide among serving bowls. Top with parmesan and basil. Serve.
