  • 250grams Woolworths couscous
  • 250milliliter Cambell's real stock chicken liquid stock
  • 2tablespoons extra virgin olive oil
  • 500grams chicken breast fillet from the deli
  • 1/3 cup Woolworths sundried tomato strips
  • 60grams Woolworths baby rocket & spinach
  • 100grams Woolworths Danish-style feta, coarsely crumbled

Description

This deliciously simple chicken couscous salad makes a quick and satisfying weeknight meal.

Method

Step 1 of 4

Place couscous in a large heatproof bowl. Bring stock to a simmer in a medium frying pan or saucepan over high heat. Pour over couscous. Cover and set aside for 5 minutes to soak. Fluff with a fork to separate grains.

Step 2 of 4

Meanwhile, heat 2 tsp oil in a medium frying pan or saucepan over medium heat. Add chicken. Cook for 10 minutes each side or until cooked through. Transfer to a chopping board.

Step 3 of 4

Add tomato, rocket, spinach, remaining oil and half of the feta to couscous. Season. Toss to combine.

Step 4 of 4

Thickly slice chicken. Divide salad and chicken among serving plates. Top with remaining feta. Serve.
