  • 500grams Woolworths beef mince
  • 1 medium brown onion, grated
  • 1tablespoons harissa Middle Eastern spice blend
  • 5 extra virgin olive oil cooking spray
  • 200grams Woolworths Turkish bread rolls, sliced crossways
  • 270grams Woolworths beetroot & feta salad kit
  • 1 medium Lebanese cucumber, peeled into ribbons
  • 250grams ready-to-eat beetroot, cut into wedges

Description

A bountiful salad that won’t break the bank and seasoned to perfection with a harissa spice blend. Whip up this hearty salad in a flash.

Method

Step 1 of 3

To make kofta, combine mince, onion and spice blend into a large bowl. Divide mixture into 12 even portions. Shape into ovals and place onto a plate.

Step 2 of 3

Heat a barbecue grill over medium-high heat. Lightly spray kofta with oil and cook, turning regularly, for 6 minutes or until cooked through. Transfer to a plate and cover to keep warm. Spray bread with oil and cook for 30 seconds each side or until golden and toasted.

Step 3 of 3

Empty salad kit onto a serving platter, reserving dressing, feta and walnuts. Add cucumber and beetroot to salad. Top with kofta, walnuts and feta. Dollop with dressing. Serve with toasted bread.
