  • 2/3 cups oat milk, save 2 tsp for later (unsweetened)
  • 2teaspoons vanilla extract, divided
  • 3teaspoons baking powder
  • 240grams oats
  • 2teaspoons cinnamon
  • 200grams carrots, grated
  • 1tablespoons canola oil

Description

These hearty carrot cake pancakes are naturally sweetened with applesauce and cinnamon.
Instruction tip
Add pecans and raisins to the batter along with the carrots a little bit of texture and extra flavour.

Method

Step 1 of 4

Place the applesauce, milk, eggs, vanilla, oats, cinnamon and baking powder in a blender and blitz to form a completely smooth batter, 1-2 minutes.

Step 2 of 4

Stir in the grated carrots and mix well.

Step 3 of 4

Heat a drizzle of oil in a non-stick pan on medium low heat and spoon 2 tablespoons of batter in. Cook for 1-2 minutes until bubbles appear on the surface and the edges begin to set, then carefully flip and cook for 2 minutes on the other side.

Step 4 of 4

Repeat with the remaining oil and batter and serve warm, with a drizzle of maple syrup if desired.
