- 100grams sultanas
- 100grams raisins
- 50grams dates, chopped
- 50grams dried apricots, chopped
- 2teaspoons butter (for greasing)
- 275grams self raising flour
- 225grams golden caster sugar
- 1 large egg, beaten
- 1 1/4 cup earl grey tea, made with 2 tea bags, hot
Description
This loaf is worth the overnight fruit soaking time, pop it in the oven in the morning for a delicious breakfast treat with a cup of tea.
Method
Step 1 of 4
Soak the dried fruit in the hot tea overnight, so the liquid is absorbed and fruit is plumped up.
Step 2 of 4
Pre-heat the oven to 140°C and grease a large loaf tin with butter and line with parchment paper.
Step 3 of 4
Add the flour, sugar and egg to the bowl with the soaked fruit and mix well. Spoon the batter into the loaf tin and bake for 1 hour and 45 minutes, until risen and golden.

Leave to cool in the tin before slicing.
