Description
Oats make a great base for these gluten free apple and cinnamon pancakes.
Method
Step 1 of 3
Tip the oats into a food processor and blitz to a fine flour consistency. Whisk the oat flour, baking powder and cinnamon together in a large bowl. Add the egg, milk, apple cider vinegar, apple and vanilla to the food processor and blitz until smooth.
Step 2 of 3
Tip the flour mix into the food processor and blend for 10 seconds to combine.
Step 3 of 3
Heat the butter in a large non-stick pan on medium heat and add ladlefuls of batter to the pan. Cook for 2-3 minutes until bubbles form, flip and cook for 1-2 minutes on the other side or until golden brown. Serve with maple syrup.
