  • 200grams oats
  • 3teaspoons baking powder
  • 2teaspoons vanilla extract, divided
  • 1tablespoons canola oil
  • 150grams Greek style yoghurt
  • 300grams berries (to serve)

Description

Banana and oat pancakes are lighter and more nutritious than traditional pancakes and just as delicious.

Method

Step 1 of 4

Place the milk, egg yolks, bananas, half the vanilla and oats in a blender, blitz to form a smooth batter and pour into a large bowl. Place the egg whites in a large bowl and whisk to stiff peaks with a handheld electric whisk.

Step 2 of 4

Whisk 2-3 tablespoons of egg whites into the batter and fold in the rest until well incorporated.

Step 3 of 4

Heat a drizzle of oil in a non-stick pan on medium high heat and spoon 2 tablespoons of batter in. Cook for 1-2 minutes until bubbles appear on the surface and the edges begin to set, then carefully flip and cook for 1 minute on the other side. Repeat with the rest of the batter.

Step 4 of 4

Mix the remaining vanilla into the yoghurt and serve with the pancakes, topped with berries.
