- 1teaspoons vanilla extract
- 25grams butter, melted and cooled (to serve)
- 150grams blueberries
- 1tablespoons maple syrup (to serve)

Description
This is a delicious way of introducing blueberries into your families meals.
Method
Step 1 of 3
Make the pancake batter as for Classic American buttermilk pancakes.
Step 2 of 3
Heat a knob of butter in the frying pan and pour out 8-10cm pancakes. Once you have poured them into the pan, sprinkle some of the blueberries on top; the batter will rise up around the berries as they cook.
Step 3 of 3
Fry the pancakes for 2 minutes on each side, turning when the edges are set and bubbles appear and pop on the surface. When cooked, keep them warm on a plate under a clean tea towel while you fry the rest. Serve with butter and maple syrup.
