- 4 eggs, beaten
- 1teaspoons vanilla extract
- 8 slices sourdough bread

Description
Sourdough makes delicious lighter French toast, sweetened with cinnamon and apple.
Method
Step 1 of 4
Pre-heat the oven to 180°C/160°C fan-forced. Place the apple slices on a parchment lined baking tray, drizzle with a little olive oil, half of the cinnamon and half of the nutmeg and toss to coat. Bake for 15 minutes to soften.
Step 2 of 4
Beat the eggs in a large, shallow dish with the remaining spices and vanilla. Heat a medium non stick pan on medium high heat and drizzle with enough oil to coat.
Step 3 of 4
Dip 2 slices of sourdough in the egg mix, turn to coat each side and fry for 1-2 minutes on each side, until golden brown. Repeat with the remaining sourdough and egg mix.
Step 4 of 4
Serve topped with roasted apples and a drizzle of maple syrup, if desired.
