  • 2 cups plain flour

  • 2 cups skim milk

  • 2 cups Greek-style natural yoghurt
  • 2tablespoons pure maple syrup

Description

Pancakes packed with crunchy chia soft bananas and sweet blueberries? Yes, please. Loved ones won't be able to resist these tasty brekkie treats.

Method

Step 1 of 4

Reserve 1 tbs chia seeds. Mash 1 banana, then slice remaining bananas and reserve.

Step 2 of 4

Sift flour and baking powder into a large bowl. Stir in remaining chia seeds. Make a well at the centre. Whisk milk and eggs in a jug, then add to flour mixture and stir until combined. Stir in mashed banana.

Step 3 of 4

Spray a non-stick frying pan with oil. Place over medium-high heat. For each pancake, pour 1/4 cup quantity of batter into the pan. Top with 1 tbs blueberries. Cook for 1-2 minutes or until bubbles appear on the surface. Turn and cook for a further 1-2 minutes or until golden-brown and cooked. Transfer to a serving plate. Repeat with remaining batter and blueberries to make 8 pancakes in total.

Step 4 of 4

Top pancakes with yoghurt, reserved sliced banana and remaining blueberries. Sprinkle with some of the reserved chia seeds. Lightly drizzle maple syrup over yoghurt. Serve with remaining chia seeds.
