Description
Turn simple scrambled eggs into an attractive brunch dish with melting cheese, herbs, and toasted muffins.
Method
Step 1 of 3
Whisk the eggs and cream together, then season well. Slice the muffins in half and set them to toast. Melt the butter in a non-stick frying pan.
Step 2 of 3
When the butter has melted, pour the egg mixture into the pan. Cook gently for a minute or two, moving it about slowly with a wooden spoon. Scatter the cheese and chives on top and continue to cook until the eggs are soft and just set and the cheese has melted.

Pile the cheesy scrambled eggs on the toasted muffins and serve with chives sprinkled over (if using).
