  • 8 slices white bread
  • 200grams Gruyère cheese, grated
  • 1tablespoons Dijon mustard
  • 4 slices thick slices of good-quality ham
  • 4 small eggs

Description

A once-in-a-while treat, this is the ultimate ham and cheese toastie - try it and see.

Method

Step 1 of 4

Butter each slice of bread on both sides. Set aside 50g of the cheese. Make sandwiches by spreading 4 slices of bread with a little mustard, (if using), then a layer of grated cheese, firmly pressed down. Season well, then add a piece of ham, another layer of cheese, and a second piece of bread.

Step 2 of 4

Melt the 2 tbs of butter in a large, non-stick frying pan and fry 2 sandwiches carefully over a medium heat for 2-3 minutes each side, pressing them gently with a spatula, until golden brown. Keep warm while you fry the remaining 2 sandwiches. Wipe the pan with kitchen paper.

Step 3 of 4

Preheat the grill on its highest setting. Place the fried sandwiches on a baking sheet and top each with one-quarter of the reserved grated cheese. Grill until the cheese has melted and is bubbling.

Step 4 of 4

Meanwhile, heat the sunflower oil in the frying pan and fry the eggs how you like them. Top each sandwich with a fried egg and serve with a pile of shoestring fries.
