  • 2tablespoons olive oil
  • 1 onion, chopped
  • 500grams cooked potatoes, cubed
  • 340grams corned beef, roughly chopped
  • 1 dash Worcestershire sauce
  • 4 eggs
  • 1 pinch black pepper
  • 1 sprig parsley, chopped (to garnish)
  • 1 pinch smoked paprika (to garnish)

Method

Step 1 of 4

Heat half the oil in a large skillet, add the onion and potatoes, and fry for 5-6 minutes or until the potatoes are golden and the onions are softened.

Step 2 of 4

Stir in the corned beef and season well with pepper and Worcestershire sauce. Continue to fry for 2-3 minutes.

Step 3 of 4

Meanwhile, heat the remaining oil in a skillet pan and fry the eggs.

Step 4 of 4

Spoon the hash onto 4 serving plates, top each with a fried egg and serve sprinkled with the chopped parsley and a little smoked paprika.
