Description

Egg dishes are very popular in the Middle East, where they are served for breakfast, as street snacks in busy markets, or as a late-night snack at home.

Method

Step 1 of 3

In a heavy-based frying pan, heat the oil and the butter. Add the garlic and sumac, and cook for 1-2 minutes, until it begins to colour. Crack the eggs into a bowl and pour into the pan.

Step 2 of 3

Sprinkle the mint over the eggs and cover the pan with a lid. Reduce the heat and cook until the whites are just set.

Step 3 of 3

Sprinkle a little salt over the eggs, divide into four portions, and serve with toasted flat or leavened bread.
