  • 3 Primo chorizo (from the deli)
  • 2tablespoons extra virgin olive oil
  • 410grams tomatoes, diced
  • 1 small brown onion, diced
  • 2 eggs
  • 1/4teaspoons salt (to taste)
  • 1/4teaspoons pepper (to taste)
  • 2tablespoons chopped parsley (to serve)

Description

Make this recipe for a tasty breakfast for two. With eggs, chorizo and tomato relish, it’s a filling, flavoursome way to start the day.

Method

Step 1 of 5

Add onion into a fry pan with the olive oil over medium heat and saute until slightly softened.

Step 2 of 5

Add the diced tomatoes in with the onion, add in salt and pepper to taste, stir then bring to simmer for 5 minutes. Set the relish aside into a serving bowl.

Step 3 of 5

Place Primo Chorizo in the fry pan and cook for 3-4 minutes, tossing, until the fat has rendered and the chorizo is sizzling. Move to a plate.

In another fry pan, add in the olive oil then crack the eggs into the pan and cook on low until the tops of the whites are set but the yolk is still runny.

Step 5 of 5

Remove the pan from the heat and take the eggs out using a spatula. Place the eggs over the relish, place the chorizo over the egg and relish, sprinkle on the parsley and serve.
